I would go with PT3 beta. I picked up the beta 1-1.5 months ago and it's worked pretty flawlessly. There were some rare crash bugs, but they seem to be pretty much resolved. Latest PT3 beta has a built in HUD also, which isn't so hard to configure. It comes up after just one hand and there's a PokerTracker button top center of the window which you click to configure. I'll be buying PT3 when it's released and until then I'll just be using the beta.
