I bet I could too, with a choke hold cutting off the oxygen and staying out of the way of the inevitable flailing. With that process tho, I think you could extend it to bison, and maybe deer/elk assuming you could get close enough to catch them in the first place. Tough call to think you could drag down a bison and choke it to death. I dunno. Packs of wolves do it nicely.

THIS is why we as humans developed weapons in the first place. So we wouldnt have to do this shit lol. Just spear it and let it die, then get it before the other apex predators do.
