I like how the lemon juice rounds it out, but I dont like to overdo it, esp with a carrot cake.

I couldnt find the specific recipe I used for the cake I made in the pic, but I found a similar one online and gave it to jon. I suggested adding some crushed pineapple (a variation that the online recipe offers) and also adding shredded coconut at a 3:1 carrot:coconut ratio.
