The so-called curvature of the Earth isn't why you can't see out like you think you should be able to. If that was the case, then we would be able to see the whole world if we were in the world's tallest building. Our eyesight is limited in general, especially due to the humidity in the air. Over a long enough distance, it creates a visual blanket that keeps us from being able to see. It's the same thing as when it's really foggy and you can't see anything but a blank area.
