What's your budget and requirements Super? You want air-cooling, yes?
Case is basically whatever you want and your budget allows, because it's the single thing you will stare at all day and have to tolerate for the life of your PC, so IMO don't skimp on it. I am biased towards Silverstone, like the RV03 or the FT02B. The TT Level 10 GT is awesome as well.
If you are really anal about power consumption efficiency, get a Corsair 750AX PSU. The AX line is more efficient than the TXv2 line.
edit: just noticed you had the original TX in there. Here is a link for the TXv2 instead, which is superior.
As mbiz pointed out, the Hyper 212+ is pretty much the nuts when it comes to air-cooling. Better than that is the ez liquid H50, but it comes at a price.
I personally use an Ergonomic Keyboard, Gaming Mouse, Wrist Gel and Gaming Mouse pad in the ergonomics department. My wrists have thanked me.
This Radeon 6790 will have all the outputs you need and then some, and will happily churn some light 3D as well. You have to keep in mind that the P8Z68-V has some onboard video options as well, at least a DVI, VGA and HDMI ports as far as I can tell. The 3D acceleration is not necessarily spectacular compared to a good discrete card, so you have to be mindful of your needs.
Oh, and get the dvd burner its own separate case. It eats up valuable space in your case you could use for anything else, such as front panel LCDs or hard drive caddys, and it's basically going the way of the dodo anyway. Plus, you can easily turn it off when not in use and it will decrease overall noise output from your rig.
