Just beware that they know that you know this and CO has position on you. Given the turn card, I don't see how we're not felting this. However, I think we need to check a turned Ace behind.

Postflop is super super standard.

I don't credit most players at this level with thinking that deeply, but regardless it seems likely (to me) that I'm behind after my flop bet is check/called and he flat called preflop unless he has 88 or 66 or something.

And I agree on checking behind a turned Ace. I actually thought about that in the hand for some reason.

On the turn it feels like I'm against an overpair or a set, amirite?

Yeah, it seems more and more that people are trying to get cute with big pairs like how villain played (though he flopped a set and stacked me, which is kinda irrelevant).

I always try to think what I could differently in this situation when the villain shows a set (full house). I guess its a perfect turn card for villain.

Does anyone every check behind on the turn to induce a bluff on the river?

I'd be more tempted to do this if I didn't think villain had a hand he would continue with, and/or if villain had a smaller stack that would make it easier to get it all in on the river.
