He goes all-in, I have the nuts, but I'm not thrilled

Villian is a pretty tight tag. I haven't seen him get out of line at all. Preflop my standard play of course is to 3-bet but sometimes I like to call TAG raises in position with AK, just to disguise my hand a bit. On the turn, the best case scenario is that we are splitting. But a lot of times, I think that this overbet means that he's freerolling me. How deep do we have to be for me to consider folding this (I have a feeling it's something around twice as deep as we are now but I'm not really sure).

So if he is free rolling 100% of the time, it's an absurdly tight fold (the kinds i do not like to make), but assuming there's a non-zero and non-trivial chance that he will occasionally shove a naked A or get stupid with some kind of combo draw that doesn't include an A (unlikely), it's a call.

I think its a really good play to occasionally shove a naked red ace in his spot. however, youre not gonna see that play much at 1/2 but you will find heaps of players who know the old shove-your-freeroll play. if this guy seems to play remotely sanely otherwise this is always a snapfold for me

I would like to point out the fact that since he was the PF aggressor and you were passive by coldcalling and played the flop passively he had a much better chance of winning this pot than you did with the exact same hand.

I guess he was "protecting."

EIther that, or repping the nuts + freeroll, understanding of course that most players are able to fold the nuts to an extreme overbet which would price them out against a freeroll type hand.

I can't fault his play though. On the river, a shove would be well warranted, might as well give it a try. His play blows though against a freeroll hand though, say you had Ace-King suited in diamonds.

Against offsuit ace, his play his good, against a red suited ax, his play is poor. It all comes down to reading the suits of your cards :D
