If I'm eating like a steak, then the prongs will be down while it's holding the steak in place for me to cut it (ldo), and I keep them facing down while taking the food to my mouth.
If I'm eating like stirfry with rice then I just use the fork to shovel the food into my mouth, prongs facing up.

Whichever way shovels food into my mouth the fastest. With steak it's in my left hand so I don't miss any valuable time cutting.

I also hold mine like a spastic, my mrs says it embarrasses her in publc, I say I can shovel food quicker than her and who gives a fuck how I hold my fork!!!! I don't even get why there is a correct hand for knife and fork.
Also, if you get a spoon instead of one of the other utensils, which hand does that go in?
Have you noticed how Americans seem unable to operate two pieces of cutlery at the same time? They cut using the knife then put it down and pick up the fork using the same hand so that they can stab the food with it.
Why is speed so important when eating? Are the sabre tooth tigers gaining on you?
Fork and spoon? Maybe?
It's a lot of fun to switch hands. Not only while eating. Say you're used to brushing your teeth with your right hand, try your left. Some people struggle to do simple stuff like drinking or opening doors with the other hand.
It's a fun project. I've done it for years. I'm pretty good switching hands for most tasks, except for shaving, wiping my ass etc. which I haven't even tried.
Shudder to think at the consequences of trying to switch and inadvertently confusing brushing with wiping. ;-)
