I'm pretty sure you can, as you have an unlimited amount of time to finish it. I asked Pokerstars a while back about a bonus and withdrawls:
Hello
I was just wondering something about the 20% bonus promotion. If I make a $600 deposit this weekend, does that mean I can not make a withdrawl until I earn 600 FPPs? If for some reason I would need to withdrawl some money when say, I only had 350 FPPs earned, would that void my bonus?
Thanks

Hello Carl,
No, this is not what it means. The only time a deposit bonus is not valid
is if you withdraw money after the deposit bonus period started, and then
deposit during the same bonus period. The bonus only applies to "fresh
money".
So, if you deposit $600 now, then earn 350 FPPs (or any amount under 600) and request a cashout, your deposit bonus will not be affected. You can cash out and then you will continue to work off your bonus as you continue to earn FPPs on our tables.
Let me know if I can be of further assistance.
Regards,
Matt
