    Default Becoming a chef

    I finally decided fuck it, not gonna become an accountant, and will become a chef instead. Any1 here a chef, or any firends that are? all opinions / information welcome.

    looking forward to being able to just stare at vegatables, and wait for them to chop themselves Gordon Ramsay style

    cheers, prob unlikely, but luckily dont really care about the money too much. as long as i can live comfortably, and occasionally buy sum nice things it willbe all good

    Couple good friends are chefs. What do you want to know? My impression of the process... go to culinary school, get a crappy line/sous chef job, work your ass off, get yelled at by the head chef, get a good letter, get a better job at another restaurant, work your ass off, get a good letter, get lucky and find an open head chef position or someone with money willing to open a new restaurant, get lucky and do good business, profit.

    zook, you can get unlucky obv, but if you go to a culinary arts program youre typically not gonna end up as a line chef. I could go with zero expierence and be a line chef. This might be diff if you just go get some sort of certificate.

    I may have the terminology wrong. Would you start as a sous chef? Or, if you're starting at a really nice restaurant, might you start as a line chef even with a culinary degree? I think that's what my friend did. But he moved up the ranks at that restaurant and went from there to owning half of his own restaurant, so it was a good move for him.

    yah if its in a really nice rest that will boost your career Im sure its a good idea to go in as a line chef if thats the only opening they have. Surely they will see your dedication since youre willing to come in below your qualifications.

    thanks, zook etc. think i got the process vaguewly worked out, need a job vaguely working w/ food. Then i cna go to college, get an GNVQ (english vocational qual.) in cooking / food prep. hopefully thatll be enough to get me into a basic job.

    what i really wanted to know what are the hours generally like? obv it varies, but sum1 at my work used to work 10 days in a row, getting there at 5.45AM and leaving 1AM. Im not prepared to do this, altho dont mind working like 12, 13 hour shifts.

    Also, are pretty much all chefs angry cunts? just a misconception, or depends?

    anything else that might put me off, that i should know about?

    cheffing is a great way to go
    you are never very far from booze in a restaurant

    weekends off are for pansies in the food industry and the hours suck
    but the waitresses will screw
    anthony bourdain has 2 books i would reccomend a noob to the food industry to read

    that's awesome man... 1 month 1 day after you made the thread and you already have the job. that's sweet that you made the decision, set your mind to it, and went for it. hope you learn a lot and everything goes great!
