Bet or Check?

Anytime you get the winning hand on the flop do you raise or check? and I assume both so what % do you do each?

Example: 7h8c9d flops ... I have 10J hearts and I bid 1st.. Should I check to make him not be worried about the straight or bet ?

I find that if I check they normally bet a low amount into me $1, the problem is they only bet $1 into me on the next flop to. I want BIG $$!!!

If I bet they fold most of the time but the rare occasion they call I bet $2, then $4 on the next turn, then I bet the pot on the river. (Kinda acting like im buying the pot)

What would probably end up being most profitable? let them try to bluff me out or bet into them?

Even though there's no flush draw out there, I wouldn't consider this hand a completely safe slowplay hand at a full table. However, I think my play would be to check the flop and see if there are any aggressors. If anyone bets, I would probably make a big raise. They might have over pair, two pair, set, or whatever. However, if everyone checks on the flop, I'd put in a bet of about 1/3 the pot on the turn. This is a pretty common bet for a steal, i think. So hopefully, they put you on a steal, and you can draw even more money from them.
