Default Standard Deviation of SnG profit

Hi Guys, so I 4 table the 55 SnG's at PP and I make money on average, but recently I've been trying to find out exactly how much per hour I make. Therefore, I finally started recording all my results on excel. What's your guy's opinion on how many tournaments you need to get a good idea of your true value per hour.? Right now I have 30 hours of play and 122 tournaments recorded, but in my opinion that's not nearly enough because I see the money/hr figure fluctuate hugely if I go on a win/lose streak.

Do you play the speeds or the regulars? I believe you will need more for the speeds, but I could be waaaay off there [just that I heard swings were bigger and more frequent].

Anyways, check out these two threads at 2+2:
