Hand 1: Well...he seems rather donkish according to his stats. The question I would ask myself is if he plays Ax like this. If the answer is yes then I might call; otherwise, I fold because you aren't beating much other than JT, AK/AQ.

Hand 1 - 63/3 sounds passive. I know these guys often aren't passive post flop so knowing that would help. If he's not overly aggressive, I probably fold to the turn bet.
