My first pick would be Mongolian, because you'd go: what happened there? post-apocalypse america, everyone's speaking mongolian? That would be great, but if you can't find the mongolian version, russian should do.
This actually sounds like a fantastic idea. Have you seen Valhalla Rising? It's pretty much a movie where a director had the idea you're pushing: highly stylized ultra violent flick with essentially no dialogue. I think there may be one or two lines total, and IIRC it's got a run time over two hours. Definitely worth checking out.
